The Corn Classics: Almojábanos & Bollos
Learn the ancient art of working with corn, a staple of Panamanian food. You will prepare “almojábanos”, delicious S-shaped fritters made with authentic, fresh white cheese from the Chiriquí highlands, and savory “bollos” served with local cheese.

The Main Event: "Mono en Bijao"
Discover the secret to “Mono en Bijao“. And no, it’s not a real monkey! This is a traditional Chiricano dish of rice, savory meats, and vegetables, all slow-cooked inside a fragrant Bijao leaf, which gives it a unique and delicious flavor.

The Sweet Finish: Plátano en Tentación
Indulge your sweet tooth by preparing “Plátano en Tentación” (Temptation Plantain). You will learn how to caramelize ripe plantains in a sweet syrup with cinnamon and spices for the perfect dessert.

The Refreshment: Limonada con Raspadura
Quench your thirst the Panamanian way. You will make a traditional lemonade, sweetened not with sugar, but with “raspadura” (unrefined cane sugar), giving it a unique and authentic taste.
More Than a Class, It’s an Experience
The best part of cooking is enjoying the results.
